Quinoa Sushi

Ingredients
  • 1 cup quinoa
  • 3.5 cup water
  • 3 tblsp apple cider vinegar
  • 1 carrot
  • 1 cucumber
  • 1 avocado
  • 1 pack yakinori (roasted seaweed)
  • flax seeds and/or chia seeds (optional)
Instructions
  1. Add quinoa and water into a rice cooker. If you don't have a rice cooker, it's easy enough to do it over a stove.
  2. When quinoa is ready and still warm out of the rice cooker, mix in your apple cider vinegar.
  3. Wait until cool.
  4. In the mean time, cut up carrots, cucumber, avocado, and any other ingredients you want in your rolls into strips/sticks.
  5. Lay one sheet seaweed over your bamboo sushi roller.
  6. Wet fingers, grab some quinoa and spread onto seaweed. Get all the way to the sides.
  7. Sprinkle a teaspoon of flax seeds over the quinoa.
  8. Place veggie sticks along the side closest to you leaving about a centimeter margin.
  9. Grab the bamboo and start rolling! Squeeze them tightly.
  10. Cut up into pieces and serve.
