First of all, apologies for the severe lack of photos in this post. I wasn’t actually sure how the salad would go. It was more of a “let’s wing it” kind of deal and we ended up remixing it the second day and it turned out absolutely amazing so it wouldn’t be right to keep this salad to myself!
Yep, those are the only photos I took. Thought I had more, but oh well, it’s the food that counts, not the photos, right? We had a pomegranate lying around for a week and weren’t sure what to do with it, so I went ahead and attempting concocting my own salad recipe. It was delicious, you should all try it and I’ll stop talking now. Here are the goods:
- 1 pomegranate
- 1 lime
- 1 cos lettuce
- 100g danish feta
- 2 cucumbers
- 0.5 cup quinoa
- 3 tomatoes
- 1 cup spinach
- 1 carrot
- wash veggies, cook quinoa
- slice cucumbers. wedge tomatoes
- roll a couple leaves of cos up and slice up
- use a peeler to peel off strips of carrot
- toss in a bowl with spinach
- cut lime into suprèmes and squeeze excess juice from core to into bowl
- toss in with quinoa
- dice or crumble the feta into the salad and give it another quick toss
- enjoy delish salad
